The flightiness of centaurs, the wisdom of canaries —
Those gaps in probability that comprise
Inside their acts such lovable disparities.

Or not so lovable; you wake up in anguish,
And where are they then, nothings on which rely
Everything, whose present absences vanquish
The inevitable and allow a flippant reply.

on which rely/Everything…The grammatical error (the failure of the verb to agree with the subject, i.e., “Everything” should take the singular verb “relies”) has been explained as an example of anacoluthon, an abrupt change of sentence structure to express a sudden surge of emotion or outburst; here expressing something like exasperation, “Just everything!”
